Abstract:Food processing and preservation is essentially women's work in much of West Africa. The author reviews the main traditional food processing methods used for several food commodities, including cassava, maize and oil seeds, and fish, and raises the issue of the complete mechanization of food processing which tends to be labour-displacing for women. Instead, she advocates the upgrading of traditional processing technologies through packaging and improved sanitary standards.
